L-Carnosine (L-Carnosine) is a dipeptide (dipeptide, two amino acids) often present .The consequence of glycation is uncontrolled cross-linking of sugar molecules and proteins(sugar molecules).
L-carnosine is a dipeptide with strong antioxidant and anti-glycation activities; blocks non-enzymatic glycosylation and protein cross-linking induced by reactive aldehydes.
Application
Carnosine has been proven to scavenge reactive oxygen species (ROS) as well as alpha-beta unsaturatedaldehydes formed from peroxidation of cell membrane fatty acids during oxidative stress.
Carnosine has a number of antioxidant properties that may be beneficial.
